Catskill Animal Shelter, the 110-acre haven for rescued horses and farm animals based in Saugerties, will again offer its popular vegan culinary program, “Compassionate Cuisine,” with chef Linda Soper-Kolton at the helm. A wide range of classes will be available, including Demystifying Vegan Baking, Moroccan Cuisine, Where Will I Get My Protein, Asian Cuisine, and Vegan 101. Classes are held at the Homestead, a meticulously-renovated 1800s-era farmhouse that offers lodging and meeting space on the sanctuary’s grounds. “Compassionate Cuisine” demonstrates that a plant-based diet can be for everyone, as an alternative to meat and potatoes or for those who love ethnic cuisine or simply want to try something new.
