Vegan cooking classes

Catskill Animal Shelter, the 110-acre haven for rescued horses and farm animals based in Saugerties, will again offer its popular vegan culinary program, “Compassionate Cuisine,” with chef Linda Soper-Kolton at the helm. A wide range of classes will be available, including Demystifying Vegan Baking, Moroccan Cuisine, Where Will I Get My Protein, Asian Cuisine, and Vegan 101. Classes are held at the Homestead, a meticulously-renovated 1800s-era farmhouse that offers lodging and meeting space on the sanctuary’s grounds. “Compassionate Cuisine” demonstrates that a plant-based diet can be for everyone, as an alternative to meat and potatoes or for those who love ethnic cuisine or simply want to try something new. Classes run through October. For a full schedule, fees, and online registration, visit www.CASanctuary.org.
