Bistrot le Chat Barbu, a new French restaurant, has opened in Rosendale at the former Rosendale Café, which closed in 2022. The bistro marks a fresh start for the space, offering French-inspired dishes with global influences.
Chef and owner Devin Delgado relocated to the Hudson Valley from New York City, where he worked as a private chef. With deep family ties to the area, Delgado decided to settle in Rosendale after his father introduced him to the vacant café space. Seeing its potential, he chose it as the home for his first restaurant.
Delgado’s menu blends traditional French bistro fare with flavors from regions once colonized by France, including Senegal, Vietnam, Martinique, and New Orleans. He describes his approach as “decolonial cuisine,” aiming to connect French culinary traditions with global influences.
Currently open for dinner Wednesday through Sunday, Delgado plans to expand to lunch and brunch service soon.
